Registered dieticians, in pursuing their role to support people through food which is basic to life, require an abundant humanity, the background of which is mastery of a wide and deep learning and knowledge. Also needed are a high level of specialized knowledge and specialized skill concerning nutrition, as industries concerned with nutrition in the fields of health, healthcare, social welfare, education and others become increasingly sophisticated and complex, taking into account the changes in the environment surrounding food with the advent of an aging society and the diversification of people’s values. In addition, they are required to have an international perspective as food imports rise with the decline in food self-sufficiency, leading to a rise in concern about food safety and security and progression of the internationalization of the environment surrounding food.
This university, as well as developing human resources in accordance with these needs, through the results of research and education concerning nutrition, contributes to the community and society in its important role as a public university, contributing to the realization of the health and prosperous life of residents of the prefecture.
For this reason, the philosophy of education and research of this school is determined to be “To contribute to the realization of the health and prosperous life of the residents of the prefecture by contributing to the community and society based on the results of education and research, and to develop human resources with an international perspective who have mastered a high level of specialized knowledge and specialized skill, with abundant humanity and wide and deep learning and knowledge”.
As well as to train registered dieticians who contribute to the health and prosperous life of the residents of the prefecture through activities in many various fields such as health, healthcare, social welfare, education, business and administration, to train human resources who can be widely active in the future, who can aim to build health through food in various circles within the prefecture while having a wide perspective.
For this reason, in addition to mastering expertise concerning nutrition, to train human resources who have the power to think proactively and continue learning all their life in a changing society.
Moreover, aiming for a role in promoting food education, to train human resources who can be active in implementing the building of health with the rich food culture and various ingredients of the prefecture, and human resources with an international world perspective who can deal with the surrounding environment of food that is being progressively internationalized.
This university holds as important its relations to the community and deeper understanding of the community, through its function as a think tank about research in health and nutrition, and as a focal point in lifelong education for people involved in nutrition.
Specifically, as well as contributing to policy and events in building health in the prefecture through research and education concerning health and nutrition, the university builds relationships with groups such as Yamagata nutritionist associations and people involved in occupations related to nutrition by providing opportunities for lifelong learning through public symposiums, classes, and other methods of exchanging information. In order to continue these contributions practically, we have established the Community Outreach and Research Promotion Center, and intend to implement practical contributions both to the local community and society as a whole.
This university was established in April, 2014 as a school specialized in one field of study, the training of registered dieticians. Many people in Japan have an interest in health and intend not only to live a long life, but to live a long and healthy life. In order to do this, it is important to have dietary education for various age groups and measures for countering lifestyle-related diseases such as diabetes and high blood pressure. Registered dieticians are in demand by society to advance health care in the aspects of food and nutrition.
Registered dieticians must have great knowledge and master many techniques. Not only the knowledge and techniques of their field, but also great learning, a deep sense of humanity, and communication skills are demanded of them.
Because this university has a small class of 40 students per year, the distance between students and instructors is close, and the education that takes place is intimate.
